My mum and i’s dinner tonight.

I’ll add prices (Australian) I shops at Cole’s for those who are Australian.

• Microwaveable Mexican rice $4
• Shredded lettuce - 500gram bag $2
• Canned corn - 410gram can $1.10
• Capsicum (bell peppers) only brought 1 but $3.90 per kgs
• Pickled onions - smallest jar I could find $1.50
• Mushrooms - 500gram bag already sliced $2.90
• Canned beetroot - was cheaper but mum and I like a particular brand $3.30
• And sliced chicken breast $8.90. Most expensive thing was chicken breast. I could have brought only 1 chicken breast as it would have been enough for mum and I but I didn’t know how much to get

French toast and sausage 😋
I used brioche bread to make it. I put three eggs and about 1/4 cup French vanilla creamer in a bowl and whisked it together, dipped my bread in the mixture and then fried it for about two minutes per side in a buttered pan on medium heat. Sprinkled some powdered sugar on each piece and used this candy corn syrup I found at Walmart. Sausages were jimmy deans maple brown and serve. Just threw those on my panini maker til brown. Only cost me a few dollars to make and was a filling good breakfast.

Homemade chicken salad served on a bed of lettuce with a sprinkling of shredded cheese 😋
Chicken was oven baked with garlic seasoning and paprika. Then diced up fine and I added purple onion, diced celery and mayonnaise.
Using romaine lettuce, I made little "boats" to hold the chicken salad and topped them with shredded cheese.

Not a meal. But this is my absolute favorite go to snack, sensible, cheap and both from Aldi!! They also have other flavors of the cheese spread. 😋

If anyone's looking for a quick, easy one pan meal, something I just threw together tonight. This makes a lot.

You'll need:
Kielbasa (12-14oz)
22oz jar Alfredo Sauce
2lbs Gnocchi
about a cup or two frozen broccoli

Slice up and fry your kielbasa with your preferred seasonings. Once that's cooked, add your gnocchi, broccoli and alfredo sauce into the same pan. Cover and cook for about 10 minutes or until done. We had cheese stuffed garlic sticks with it. It's delicious and quick 😋
